Italian Potato Salad

Ingredients

  • 2- 2 1/2 lbs potatoes
  • 1/4 c. olive oil
  • 2 T. whole-grain mustard
  • 1 T. apple cider vinegar
  • 1 t. honey
  • 1/2 t. kosher salt
  • 1/2 t. pepper
  • 8-12 oz salami, thinly sliced, quartered bite-size, about 2 c.
  • 2 green onions, sliced very thin, about 1/4 c.

Preparation

Step 1

Boil the potatoes until fork tender. Drain & cool.

Peel potatoes & dice into 1/2-inch pieces.

Place potatoes in a large mixing bowl.

Combine oil, mustard, honey, vinegar, salt & pepper in a jar. Seal tightly & shake to combine.

Pour the dressing over the potatoes & stir gently to coat.

Add salami & green onions, stir well.

Refrigerate until ready to serve.
