Roasted Cherry Tomato Claflouti

Ingredients

  • 2 cups cherry tomato
  • 2 tbsp olive oil
  • 1 tsp chopped fresh thyme
  • 2 cloves garlic crushed
  • 2 tsp granulated sugar
  • salt/pepper
  • 1 cup light cream
  • 3 eggs
  • 2 tbsp flour
  • 2 cups mozz

Preparation

Step 1

Arrange cherry tomato in a single layer in a shallow 6 cup baking dish. Drizzle oil, sprinkle the garlic thinly. Add the sugar and 1/2 tsp of salt and 1/4 tsp of pepper. Toast in 400 F oven till skins shrivel slightly

In a blender cream eggs, flower till smooth. Pour over tomato and sprinkle cheese. Reduce heat to 350 F. Cook for 25 minutes till golden and puffed.
Serve with croissants.
