Hot Milk Cake

This cake, also called Lazy Daisy Cake because it is easy and quick to make is one of my wife fondly remembers from her youth.

Ingredients

  • 2 eggs, beaten
  • 1 cup (250 ml) sugar
  • 1 cup (250 ml) flour
  • 1 teaspoon (5 ml) baking powder)
  • 1/2 cup (125 ml) hot milk with a heaping tablespoon (15 ml) butter
  • 1/3 cup (75 ml) brown sugar
  • 1 tablespoon (15 ml) light cream
  • 3 tablespoons (50 ml) melted butter
  • 1/2 cup (125 ml) shredded coconut

Preparation

Step 1

Preheat oven to 350 F (180 C). Grease a 9-inch (23 cm) round or an 8 inch (20 cm) square cake pan. In a bowl, whisk together eggs and sugar; then add flower; baking powder and hot milk/butter and mix until just combined. Pour batter into cake pan and bake 30 minutes. In a small bowl, mix together brown sugar, cream, butter and coconut to make a topping; spoon over cake. Bake 10 to 15 minutes more, or until a toothpick inserted in the center comes out clean.
