Ingredients
- 1 package PC Udon noodles
- 3 - 4 ounces cooked shrimp, pork, fish or chicken or cooked ground beef, pork or chicken or cooked or raw tofu or any combination
- a handful of leafy greens (choy sum, spinach, or baby bok choy - I used yu choy)
- 2 teaspoons light soy sauce
- 2 teaspoons dark soy sauce
- 1 teaspoon Chinese black vinegar
- Crushed red pepper flakes, to taste
- teaspoon of homemade Chinese chili oil (for my bowl) and teaspoon of Hoisin sauce (for D's)
- Salt, to taste
- Chopped scallion
- Chopped cilantro
- Chopped basil
- 2 - 3 cloves thinly-sliced garlic
- 3 tablespoons olive oil
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds, to garnish
- 2 tablespoons chopped peanuts or cashews, to garnish
Preparation
Step 1
Boil the noodles according to package directions until done. In the same pot, blanch the leafy greens until cooked through. Drain both.
Add the cooked noodles and greens to a heatproof bowl, along with the light soy sauce, dark soy sauce, vinegar, salt, scallions, cilantro, and optional protein and put the chili oil in the bottom of my serving bowl, if using and the hoisin in the bottom of D's.
In a small pot, heat the oil and the garlic until shimmering and the garlic is light golden. Carefully pour the hot oil over the bowl of noodles, and mix everything together then serve. Garnish with cashews or peanuts, if desired.
