Ingredients
- 1 1/2 lbs. fresh spinach
- cleaned and stemmed
- 1 1/2 cups fresh mushrooms, thinly sliced
- 1/2 bunch fresh parsley, chopped coarsely
- 2 green onions, chopped coarsely
- 2 garlic cloves
- 2 tsp. mustard
- 2 tbsp. sugar
- 2 tsp. kosher salt
- 1 1/2 tsp. ground black pepper
- 1 cup olive oil
- 3/4 cup red wine vinegar
- 1 cup crisp bacon, diced
Preparation
Step 1
Dry spinach thoroughly. Place in salad bowl with mushrooms. Combine parsley, onions, garlic, mustard, sugar, salt, black pepper and olive oil in blender and mix thoroughly. Slowly add red wine vinegar to blend on medium speed. Pour into saucepan; add bacon. Bring to a full boil and remove from heat immediately.
