Ingredients
- 1/4 cup (1/2 stick) butter
- 1/4 cup oil
- 6-7 large potatoes, baked, peeled and sliced into rounds, 1/2 inch thick
- 4 green onions, minced
- 1/4 tsp. caraway seed
- Salt and freshly ground pepper
- 1 cup sour cream
Preparation
Step 1
Heat butter and oil in large skillet over medium-high heat. Add potaotes and cook until golden, turning gently.
Add onion and caraway seed and cook another few minutes. Season to taste with salt and pepper. Turn out onto platter and dollop with sour cream.
A clever way to use leftover baked potatoes and the perfect accompaniment to our marinated steak.
4 to 6 servings.
