Beef in Creamy Paprika Sauce

Ingredients

  • 1/2 lb. thinly sliced beef chuck, cut into 1/2 inch strips
  • Flour
  • 2 tbsp. (1/4 stick) butter
  • 1 tbsp. oil
  • 1/2 cup chopped onion
  • 1 cup whipping cream
  • 1 tbsp. tomato paste
  • 2 tsp. paprika
  • Salt and Freshly ground pepper

Preparation

Step 1

Dust beef strips lightly with flour, shaking off excess. Heat butter and oil in medium skillet over medium-high heat. Add beef and stir-fry until brown on all sides. Remove from pan; set aside.
Reduce heat to low. Add onion and saute until golden. Stir in cream, tomato paste and paprika, blending well. Increase heat to medium and simmer sauce, stirring constantly, until thickened. Return beef to skillet and heat through. Taste and season with salt and pepper. Serve immediately.

Serve over buttered noodles tossed with poppy seed or on a bed of rice.
