ZUCCHINI PROVENCALE

  • 6 small zucchini
  • 1 small onion, chopped
  • 1/4 cup butter
  • 1 lb tomatoes, sliced
  • 3/4 cup grated cheese
  • Salt and pepper, to taste
  • 1 cup fresh basil, chopped

Preparation

Step 1

Cut the zucchini into 1/2" slices and put 1/2 of it into a buttered 9" x 13" casserole dish. Sprinkle 1/2 the onion over top. Layer with 1/2 the tomatoes and then 1/2 the cheese. Add salt and pepper and 1/2 the basil. Repeat layers, ending with basil. Bake at 350F for 45 minutes.
