Chicken with Roquefort Cream Sauce

Ingredients

  • 3 Tbl olive oil
  • 3-1/2 pounds chicken
  • 1 C whipping cream
  • 1/4 C dry white wine
  • 5 cloves garlic, minced
  • 1 tsp Herbes de Provence or dried Thyme
  • 3/4 C crumbled Roquefort Cheese
  • Fresh Chives, chopped

Preparation

Step 1

Heat oil over medium-high heat. Season chicken with pepper and add to skillet. Cook unitl golden brown on all sides, approx. 8 minutes. Add cream, wine, garlic and herbs. Cover and simmer until chicken is tender and cooked through, turning once, about 20 minutes.

Transfer chicken to platter. Boil liquid until reduced to sauce consistency, about 5 minutes. Add cheese and whisk until melted and sauce is smooth. Season generously with pepper.

Pour sauce over chicken and garnish with chives.
