Ingredients
- Glaze:
- 2 cups flour
- 2 tbsp. sugar
- 4 tsp. baking powder
- 1/4 cup cold butter or margarine
- 1 cup cold milk
- 1/3 cup butter or margarine
- 1 cup packed brown sugar
- 3 tsp. cinnamon
- 1/2 cup icing sugar
- milk or water
Preparation
Step 1
1. In a large bowl put flour, sugar and baking powder. Cut in cold butter until crumbly. Make a well in the centre of the mixture.
2. Pour milk into well. Stir to form a soft dough; adding a bit more milk if necessary.
3. Turn dough out onto a lightly floured surface; knead 8 to 10 times. Roll dough into a rectangle about 1/3" thick and 12" long.
4. Cream second amount of butter, brown sugar and cinnamon together well. Drop 1 measuring tsp. of cinnamon mixture into each of 12 greased muffin cups. Spread the remaining cinnamon mixture over the dough rectangle. Roll up as per jelly roll.
5. Slice roll in to 12 equal portions. Place portions sliced side down in muffin cups. Bake at 400F for 20 to 25 minutes. Turn out of muffin tin to cool.
6. Prepare the glaze by adding enough milk or water to the icing sugar to make a thin glaze. Drizzle over rolls.
