Ingredients

  • 5 sour dough English muffins split
  • 1 C shredded cheddar
  • 1 C shredded Swiss
  • 1 lb cooked breakfast sausage drained and crumbled
  • 12 eggs lightly beaten
  • 2 C milk
  • 1/3 c chopped fresh parsley
  • 1/3 C chopped green onions with tops
  • 1 C sliced mushrooms

Preparation

Step 1

Arrange the English muffins in a buttered 9X13 baking dish. Sprinkle with the cheddar and Swiss cheeses and sausage. Beat the eggs, milk, parley and green onions un a bowl until mixed. Pour over the layers and chill for 8 to 10 hours. Sprinkle with mushroom and bake at 350 for 50 minutes or until set, let stand for 10 min before serving.
