Ingredients
- 2 Tbl unsalted butter, softened
- 1-1/2 tsp finely chopped fresh cilantro
- 1/2 tsp finely grated lime zest
- 1/4 tsp tobasco sauce
- Kosher salt
- 1 chicken breasts
- 2 Tbl fresh lime juice
- 1 Tbl extra virgin olive oil
Preparation
Step 1
Butter:
In small bowl, mash the butter, cilantro, lime zest, Tabasco and 1/4 tsp kosher salt to form a smooth butter. Scrape onto a piece of plastic and roll and twist plastic to shape into short log. Refrigerate until firm enough to slice, 20-25 mkinutes.
Chicken:
Put chicken in bowl, season with 3/4 tsp salt and drizzle with lime jice and olive oil. Let sit for 15 minutes.
Grill chicken, serve with slices of butter on top.
