Green Peppercorn Sauce

Ingredients

  • 1 tsp olive oil
  • 1 medium shallot, minced
  • 1 Tbl whole green peppercorn, crused
  • 1 Tbl whole green peppercorns, reserved for garnish
  • 4 ounces Cognac
  • 1 sprig fresh Thyme
  • 1/2 C heavy Cream
  • 1 C demiglace

Preparation

Step 1

Heat oil in skillet, saute shallots until translucent. Add crushed peppercorns. Take pan off heat, deglaze with cognac. Reduce, add thyme and cream. Reduce again. Add demiglace, whisk to incorporate. Strain and return to pan. Add whole peppercorns, salt and pepper to taste.
