Ingredients
- 2 T olive oil
- 1 T honey
- 1 t lemon zest, plus 2 T lemon juice
- 1 lb. mozzarella cheese, torn or slices
- 6 oz. (20 slices) thinly sliced salami
- 1/3 c green olives, pitted
- 1/2 c loosely packed fresh mint leaves, torn
- 1/2 t flaky sea salt like Maldon
- 1/4 t pepper

Step 1
Whisk together oil, honey and lemon juice. Divide the mozzarella, salami, olives and mint among for plates. Drizzle with dressing, sprinkle with lemon zest, salt and pepper. Serve at room temperature.
