Momaima Cookies

Ingredients

  • 1 cup butter, at room temperature
  • 1 square unsweetened chocolate
  • 1 tsp vanilla
  • 1/4 cup granulated sugar
  • 1 egg, beaten
  • 2 cups graham cracker crumbs
  • 1/2 cup chopped walnuts
  • 1 cup flaked coconut
  • 2 Tbsp instant vanilla pudding mix
  • 3 Tbsp milk
  • 2 cups confectioner's sugar
  • 6 oz semi-sweet chocolate
  • 1 1/2 Tbsp oil

Preparation

Step 1

Put 1/2 cup butter, granulated sugar, unsweetened chocolate, and vanilla in top of double boiler. Cook over boiling water until blended.
Add egg and cook five minutes, stirring. Add crumbs, nuts, and coconut. Press mixture into 9" x 9" x 2" buttered pan. Cool and chill about 15 minutes.
Cream remaining 1/2 cup butter until fluffy. Beat in pudding mix and milk, add confectioner's sugar gradually and beat until smooth. Spread over first layer and chill or freeze 15 minutes.
Melt semi-sweet chocolate with oil over low heat and spread quickly over 2nd layer. Chill, cut into 1 inch squares and keep in refrigerator or freeze - freezes beautifully!
