MAHIMAHI WITH BALSAMIC WINE SAUCE

2tbs sauce per fillet.

Ingredients

  • 4 (6oz) mahimahi fillets
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tsp olive oil
  • 1/4 c finely chopped red onion
  • 1 c dry red wine
  • 1/4 c balsamic vinegar
  • 1 tbs capers
  • 1 tbs chopped fresh parsley

Preparation

Step 1

1) sprinkle the fish with salt and pepper. heat olive oil in a large nonstick skillet over medium-high heat. add fish an onion, cook for 3 minutes. turn fish over. stir in wine,vinegar, and capers; cook 3 minutes. remove fish from pan. cook wine mixture an additional 3 minutes or until reduced to 1/2c. serve sauce with fish; sprinkle with parsley.
