Sweet & Sour Pork or Beef

Ingredients

  • Sweet & Sour Sauce:
  • 2 lb. pork lean or pork roast cut in 1 inch long strips
  • 1 med. onion cut lengthwise
  • 1 green pepper cut in squares
  • 2 med. carrots peeled & cut diagonals
  • 1 20oz. can chunky pineapple (keep juice for sauce)
  • 1/2 lb. fresh mushrooms cut into half
  • 3 Tblsp. cornstarch
  • 3 Tblsp. soy sauce
  • 4 Tblsp. vinegar
  • 9 Tblsp. water & pineapple juice (from above)
  • 6 Tblsp. sugar
  • 4 Tblsp. ketchup

Preparation

Step 1

Mix all vegetables together and blanche in boiling water for 5 minutes. Drain and set blanched vegetables in a 2 quart pan. Add pork to vegetables and toss them well.

Sweet & Sour Sauce:

Mix cornstarch and water in small bowl. Mix soy sauce, vinegar, and ketchup in a medium saucepan and bring to simmer. Add cornstarch mixture and simmer until thickens and clears, stirring constantly. If too thick, thin with water. Taste, if you wish sweeter, add more sugar or it more sour add vinegar (for richer use pineapple juice)
