Cauliflower Rice
Serves: 2-3
P.S. The first time I made it (pictured above) I didn’t process it down enough to make it smaller. Let it resemble couscous and also saute until it’s a consistency you like!

Ingredients
- Instructions:
- 1 head of cauliflower
- 1/2 sweet (or yellow) onion
- 3 cloves of garlic
- 1 tbsp coconut oil
- Salt and pepper, to taste
Preparation
Step 1
Remove leaves and stem from cauliflower; discard.
Process entire head of cauliflower in your food processor until it resembles rice.
Dice the onions and garlic to your desired size.
Add coconut oil to a pan over medium heat.
Add in onion and garlic until slightly browned.
Add in grated cauliflower, salt, and pepper and stir until heated (5-8 minutes).
