Cauliflower is rich in vitamins C, B and K. You can use regular cheddar cheese but generally a white cheddar is used in this healthy and tasty cauliflower soup recipe.

Ingredients

  • 1 head cauliflower
  • 1 medium onion
  • 2 cups chicken broth plus warm 1/2 cup heavy cream and 4 tablespoons butter
  • Salt and pepper, to taste
  • 4 tablespoons flour
  • 2 cups whole milk
  • 14 ounces white cheddar cheese, cubed

Step 1

Cut up cauliflower, including the stalks. Cook in salted water until tender. Drain and mash coarsely. Set aside.

Heat butter in a large saucepan and add onion. Cook until onion is transparent, but not brown. Add flour and stir until blended. Cook over medium heat for 3 to 4 minutes, while stirring.

Stir in the warmed chicken broth and milk and cook over medium to low heat, while stirring, until the mixture reaches a low boil and thickens slightly.

Add the cooked cauliflower and cream to the milk mixture and stir to blend.

Season to taste with salt and pepper, and add the cheese.

Reheat to serving temperature and the cheese is melted.
