BISCUIT MIX MUFFIN CUPCAKES

Ingredients

  • 2 cups biscuit mix
  • 3 TB sugar (or use Sprinkle Sweet)
  • 3/4 cup milk
  • 1 egg
  • 2 TB oil

Preparation

Step 1

Put the biscuit mix and sugar (or sweetener) into medium mixing bowl. Put last 3 ingredients into your blender, blending about 20 seconds, just to combine well, high speed. Pour into biscuit mix-sugar mixture and use large spoon to stir mixture till all of the dry ingredients have been dissolved, but do not over-beat.

Divide batter equally between 12 paper lined muffin or cupcake tin wells, filling about 2/3's full. Bake at 400F for 18 to 20 mins or till toothpick inserted into centers comes out clean. Cool 15 mins in pan on rack.

Makes 1 dozen.
