Lucy's Company Ham, Cheese and Eggs

Ingredients

  • 14 slices white sandwich bread
  • 1 lb chopped cooked ham
  • 1 C grated sharp cheddar cheese
  • 1 C grated monterey Jack Cheese
  • 2 3 oz cans chopped green chillies
  • 7 eggs
  • 1/2 t dry mustard
  • 1 t salt
  • 3 C milk
  • 1 C crushed cornflakes or enough to cover
  • 1/4 C melted butter

Preparation

Step 1

Preheat oven to 350

Remove crust from bread and cut slices in half. Place half the bread in a buttered Pyrex dish. Layer with ham, cheeses and green chilies. Cover with remaining bread.

Beat eggs with dry mustard, salt and milk. Pour over casserole and refrigerate for 12 hours or overnight. Before baking cover with cornflakes and drizzle with butter. Bake for 30 to 40 min.
