Ingredients
- For Cookie Layer
- 2 1/4 sticks butter, softened
- 3/4 cup sugar
- 1 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 2 eggs
- 4 cups flour
- For Cheesecake Top
- 12 oz whipped cream cheese, room temp
- 1 can (14oz) sweetened condensed milk
- 1/4 cup fresh lime juice (2-3 limes)
- 1 egg

Preheat Crock-Pot® 5-in-1 Multi-Cooker to 325 degrees
In large bowl using hand held or stand mixer beat together butter, sugar, vanilla and salt
Add in egg and mix until combined
Slowly add flour and mix until dough is formed
In a separate bowl beat together all cheesecake ingredients until smooth
Spray bottom of slow cooker with non-stick cooking spray
Press cookie dough into bottom, use a wooden spoon
Pour cheesecake mixture over the top and spread evenly
Cover and bake for 15-20 minutes or until lightly browned around edges and cheesecake looks set
Cool completely when done before removing from crock
