Worlds tallest omelet

Ingredients

  • 3 oz cooked and thinly sliced steak
  • 2 oz cooked fresh spinach
  • 3 oz shredded cheddar
  • 5 eggs
  • 2 T club soda
  • 1/8 t baking powder
  • 1/8 t salt
  • 1/8 t pepper
  • 1 T unsalted butter

Preparation

Step 1

Preheat broiler to high

warm up the steak and spinach in a saute pan.

Place eggs, club soda, baking powder, salt and pepper in blender and mix on high to incorporate air into the mix.

Belt the butter in a large non stick pan over medium high heat. Pour in the egg mix and use a rubber spatula slowly push the cooked egg from 1 side of the bottom to the other to allow new raw egg to reach the bottom of the pan and cook.

When the omelet is cooked on the bottom and the top is still runny, flip and continue to cook, place in broiler just until browned and place steak, spinach and cheese on top and fold over.
