BBQ RIB METHOD

Sorry, although I am a grill enthusiast, I have tried many, many grilled rib recipes, and have found this method maintains the moisture and texture you want to achieve. Use your favorite sauce.

Ingredients

  • Rubbing - choose a dry rub; easy to make your own (2 tbs each ) chili powder, black pepper, kosher salt, (1 tbs each) paprika, garlic powder. Place ribs on rimmed baking sheet. Apply rub w/fingers by
  • Roasting - cover baking sheet tightly w/foil and bake ribs at 300 degrees for 1.5 - 2 hrs.

Preparation

Roasting - cover baking sheet tightly w/foil and bake ribs at 300 degrees for 1.5 - 2 hrs.

Smoke/Grill - preheat grill to high and leave other half off to maintain temp of 300-400. This permits smoking and grilling at same time. Place soaked (in water at least 1 hr) wood chips in disposable aluminum pan over lit portion of grill; or use box if equipped with your grill. When smoke rises, slather ribs w/sauce and arrange sauce side down on unlit portion of grill. Turn every 15 min and apply sauce; this keeps them moist and adds flavor. Test for doneness after 1 hr. If you pick up the slab in the middle w/tongs and they droop, they are done.
