Ingredients
- 3 cups shredded Monterey jack cheese
- 1 cup shredded mild Cheddar
- 1 Tbsp cornstarch
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- 1 cup pale lager (such as corona)
- 2 Tbsp chopped chipotles in adobo sauce
- 1/2 tsp minced lime zest
Preparation
Step 1
Toss together Jack cheese, Cheddar, and cornstarch.
Heat oil in a large saucepan over medium-low. Add garlic, cumin, coriander, and oregano; cook until garlic softens, about 1 minute.
Add lager and bring to a simmer over medium heat. Whisk in cheese mixture a handful at a time, letting each addition fully melt before adding the next. Whisk in chipotles and zest and transfer to a warm fondue pot.
