GREEN RICE

If you prefer not to use green bell peppers, substitute fresh mild green chilis.

Ingredients

  • 1 1/2 cup rice, cooked
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 green pepper, chopped
  • 1 1/2 cups grated Parmesan and Romano cheese
  • 1 egg, beaten
  • 1 cup milk
  • 1 medium onion, chopped
  • 2 tbs dried parsley
  • 1/2 cup buttered breadcrumbs

Preparation

Step 1

Preheat oven to 350°. Lightly butter a 1-qt casserole dish.
In a large mixing bowl, combine rice, egg, oil, milk and salt. Stir in onion, parsley and green pepper. Stir in 1 cup cheese. Pour into casserole.
Mix remaining cheese with breadcrumbs; sprinkle on top of casserole. Bake 35-40 minutes, until sauce is thickened and top is golden brown.
