Ingredients
- 1 tbs butter
- 1 small onion, chopped
- 1/4 tsp ground corriander
- salt/pepper
- 1 cup long grain rice
- 14 1/2 oz chicken broth
- 2 tbs chopped parsley
- 1/4 cup sliced almonds, toasted
Preparation
Step 1
In med saucepan melt butter over med heat. Add onion and cook until brown, about 3 min. Add corriander, salt and pepper. Add rice and cook about 2 min. Stir in chicken broth; bring to boil. Cover and simmer on low heat until liquid is absorbed, about 15 min., Remove from heat and lt stand covered 10 min. Stir parsley into rice; sprinkle w/ almonds.
