Low carb blueberry muffins

Ingredients

  • pam
  • 2 T wheat or oat bran and 1 t soy flour mixed together
  • 1 C soy flour
  • 1/2 C splenda
  • 1 t baking powder
  • 2 eggs
  • 1/2 C heavy cream
  • 1/3 C club soda
  • 1/2 c blueberries sprinkled with 1 T of splenda

Preparation

Step 1

Preheat oven to 375

Spray 6 muffin cups with pam. Evenly sprinkle the pan with wheat bran and soy flour mixture being careful to coat the sides also.

In a bowl using a wire whisk mix all the remaining ingredients except the blueberries until well blended, then fold in the berries and fill the 6 cups evenly. Place on center rack and bake 20 to 25 minutes. they are done when a toothpick placed in center comes out clean.
