Chocolate Frosting for That Chocolate Cake
- 1 1/4 Cups Sugar
- 1 Cup Heavy Whipping Cream
- 5 oz. Unsweetened Chocolate, finely chopped
- 8 Tbs. Unsalted Butter, cut into 1/2" pieces
- 1 tsp. Vanilla
In a small saucepan, combine sugar and cream and bring to s boil over medium heat, stirring occasionally. Reduce heat, and simmer for 6 minutes. Remove pan from heat and add chocolate and butter, stirring until melted. Pour into a bowl and stir in vanilla. Let frosting cool, whisking gently from time to time, while you bake cake. (Don't over-whip or you'll create air bubbles.) When cake layers have cooled, check frosting. it should be the consistency of mayonnaise. If it is still too thin, let cool longer.
