Chicken Gumbo Soup

Great main dish in winter .. with crusty bread and a green salad. Warning! Do NOT let the frozen okra thaw out before you put it in the soup! It won't get sticky if it's put in still frozen. ... As with all homemade things, this tastes nothing like the canned variety:)
Ingredients
- 1-1/2 lbs. boned, skinned chicken
- 3 c. water
- 1 chicken bouillon cube (1/2 if Knorr)
- 1/2 c. finely chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped green bell pepper
- 2 tsp. parsley
- 1/4 tsp. cayenne or red pepper flakes
- 1 28-oz. AND 1 15-oz. can tomatoes (UNdrained and cut up)
- 1/2 10-oz. pkg cut frozen okra
- 1/8 c. uncooked regular rice
- This is the original recipe, halved. You may want to double it for larger families, especially if it's the main course
Preparation
Step 1
Combine chicken and water in large pot and bring to boil. Skim off any scum that rises to surface. Add bouillon, onion, bell pepper, celery, parsley, and cayenne. Reduce heat and cover. Simmer 50-60 minutes, or until chicken is tender. Remove chicken and cut into pieces. Set aside the chicken and bring soup back to boil. Stir in tomatoes, rice and FROZEN okra (I can't stress the FROZEN enough!). Reduce heat, cover and simmer 12-15 min. or until rice is tender. Stir chicken back in and simmer until thoroughly heated
