Blintz Soufffle

This is a fast BRUNCH recipe, that also works when your husband calls and says he's bring 4 clients home for dinner .. in 1/2 hour! Frozen blintzes come in cheese, cherry, blueberry and apple. You can use all cheese, or alternate with fruit .. Just add a green salad! .. Almost tastes like cheesecake

Ingredients

  • Can be topped with:
  • 2 pkg. frozen blintzes
  • 1/2 c. butter
  • 4 eggs
  • 1/4 c. sugar
  • 1-1/2 c. sour cream
  • 1-1/2 tsp. vanilla
  • sour cream
  • berries
  • you might like a dash of cinnamon

Preparation

Step 1

Melt butter in 9x13 pyrex pan. Place frozen blintzes in single layer in pan (I like to alternate fruit & cheese). Roll and coat them with melted butter. Combine remaining ingredients and beat until smooth. Pour on top of blintzes. (may be made the night before, to this point, and refrigerated) Bake, uncovered, 45-60 min. at 350. REALLY GOOD!!
