Ingredients
- 1 lb. cod fish fillets
- 2 tsp. soy sauce
- 2 tsp. lemon juice
- 1/8 tsp. garlic powder
- pinch ginger
- 3/4 tsp. granulated sugar
- 1/3 cup chopped green onion
- 1-1/2 cups sliced fresh mushrooms
- 1 small red pepper, seeded and cut in slivers
Preparation
Step 1
1. Arrange fish in 2 quart casserole dish. Mix next 5 ingredients in a small bowl. Brush over fish; reserving the rest of the marinade for later. Sprinkle fish with onion, mushrooms and red peppers.
2. Cover and bake at 400F for 20 to 30 minutes. Dab the fish with marinade mixture halfway through baking. When fish flakes easily with a fork it is done.
