PEAS & PEANUT SALAD

Ingredients

  • 1 (10-oz) box frozen peas, unthawed
  • Dry roasted peanuts
  • 1 cup sour cream
  • 1 1/2 cups mayonnaise (Kraft's brand preferred)
  • 1 TB sugar
  • 1 tsp onion powder
  • 1/4 cup dry minced chives (canned or bottled)
  • 1/2 tsp dry minced parsley flakes.

Preparation

Step 1

Empty frozen peas into a medium mixing bowl. Use that box in which to measure enough dry roasted peanuts that it will fill the box right to the top. Add to the frozen peas. The peas are not supposed to be cooked, and the small amount of liquid that results from letting them thaw while combined with the other ingredients in this salad, is just enough to give it the proper consistency.

Next mix together in a small bowl, cream and mayonnaise. Stir in sugar, onion powder, dry minced chives, plus parsley flakes. Pour over peas & peanuts. Stir to completely coat them in the dressing mixture.

Refrigerate in a covered container 24 hours before attempting to serve them, which will allow both the peanuts and peas will soften considerably in the dressing.

Leftover should be covered and refrigerated to be used within a week. Do not freeze.
