Chinese Coleslaw

Ingredients

  • 4 cups Chinese cabbage shredded
  • 8 3/4 ounces crushed pineapple
  • 8 ounces waterchestnuts sliced
  • 1 cup parsley chopped
  • 1/4 cup scallion sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon ginger peeled and grated

Preparation

Step 1

Whisk together mayo, mustardd and ginger- set aside

Combine everything else- chill overnight

To serve- mix both together.
