Place oven rack in uper and lower third. Preheat to 325. Whisk 2 large egg whites and 1/4 sugar until frothy. Whisk in 1 tbsp lime zest and 1/4 tsp kosher salt. Add 7 oz (about 4 c) unsweetened coconut shavings (NOTE: coconut shavings, also called coconut chips, are availabe in many natural food stores, if cant find them then use 7 oz bag of sweetened shredded coconut and reduce from 1/4 c sugar to 1 tbsp sugar). After adding coconut fold to coat. Drop heaping tablespoonfuls of mixture onto 2 parchment paper ined rimmed baking sheets. Bake, rotating pans halfway thogh from top to bottom and back to front until goldne brown, about 18-22 minutes. Let cool on baking sheets.
