Ingredients

  • 8 slices canadian bacon
  • 4 english muffins split
  • 2 t white vinegar
  • 8 eggs
  • S/P
  • Hollandaise sauce see recipe
  • Freshly chopped parsley for garnish

Preparation

Step 1

Brown the bacon in a medium skillet and toast the English muffins, cut sides up. on a baking sheet under the broiler.

Poach eggs being careful not to break yolks.

Serve by placing English muffin on plate, then bacon followed by egg and topped with Hollandaise sauce.

Garnish with parsley
