Walnut lemon rice pilaf

Ingredients

  • 1/2 c coarsely chopped walnuts
  • 1/2 c chopped red onion
  • 2 cloves minced garlic
  • 2 t olive oil
  • 1 8.8 oz package booked brown rice
  • 1/4 c chopped parsley
  • 1/2 t shredded lemon peel
  • 2 T lemon juice
  • 1 small yellow bell pepper

Preparation

Step 1

in a dry skillet heat nuts until lightly toasted about 3-5 mins stirring constantly-remove
in same skillet cook yellow pepper, onion and garlic in hot oil over medium 5 mins
add rice to skillet-cook, stir heat through
stir in nuts, parsley, lemon peel and juice and some salt
serve
