Ingredients
- 1 cup cilantro
- 1/2 cup parsley
- 1/4 white onion, chopped
- 1 garlic clove, minced
- 1.5 cups water
- salt and pepper
- 1 tsp olive oil
- 1 cup long grain white rice
- 1 tbsp lime juice
Preparation
Step 1
In a blender, combine cilantro, parsley, onion, garlic, and water. season with salt and pepper. Blend until smooth, 15 seconds.
In a medium saucepan, heat olive oil over medium. Add rice and stir to coat. Add herb mix and bring to a boil. Reduce to a simmer, cover, and cook until water is absorbed, 15 minutes. Remove from heat and let sit, 5 minutes. Add lime juice and fluff with fork.
