Chunky Potato Soup

Ingredients

  • 5 cups of water
  • 4 chicken bouillon cubes
  • 1 (32oz) pkg frozen cubed hash browns
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 onion chopped
  • 1/2 cup garlic mashed potatoes(INSTANT)
  • 1 1/2 cups half and half
  • 1 cup cooked chicken cut into chunks
  • 1 (8oz) sour cream
  • 1 (14oz) can diced potatoes

Preparation

Step 1

1. In a large soup pot bring water to a boil, add bouillon cubes. Reduce heat to medium-low and add hash browns, let cook about 30 mins.

2. Salt and pepper the soup and add onions. Stir in the garlic mashed potatoes.

3. Pour in the half and half, stirring to combine. Add the chicken and sour cream. Simmer for about 20 mins and add the can potatoes. Simmer 5 more mins and serve.
