Ingredients

  • 4 egg yolks
  • 2 whole eggs
  • 1/4 c lemon juice
  • 1/3 c vinegar
  • 3/4 cup sugar
  • 4 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup canned skimmed evaporated milk
  • 3 cups oil
  • 1/2 lb margarine

Step 1

Into blender put egg yolks, whole eggs, lemon juice, vinegar, sugar, salt, pepper, & milk. Blend 5 minutes using on/off speed till mixture is smooth. Clean mixture away from the blades periodically and then add: oil (in steady constant stream)& margarine in small bits.

Blend again 3 minutes. Refrigerate 24 hrs before using.

Makes 1-qt + 1-pt. (3 pints).
