Ingredients
- Frosting:
- 2 boxes double layer chocolate cake mix
- 4 eggs
- 3/4 cups oil
- 8 oz. cream cheese
- 3 cups icing sugar
Preparation
Step 1
1. Mix cookie ingregients with paddle attachment on mixer.
2. Roll cookie dough into 3/4" balls. Do not flatten! Place on cookie sheet about 2" apart.
3. Bake in preheated 350F oven for 10 to 12 minutes.
Filling:
1. Cream icing sugar. Mix in icing sugar gradually, mixing after each addition.
Assembly:
1. Sandwich two chocolate cookies together with the cream cheese icing.
Variation:
Use marshmallows instead of icing to sandwich the cookies. Place a marshmallow on one cookie; microwave for about 12 seconds and sandwich with the second cookie.
