Ingredients
- 3 medium carrots, sliced
- 2 large onions, chopped
- 4 celery ribs, chopped
- 1 large green pepper, seeded & chopped
- 1 T. olive oil
- 1 garlic clove, minced
- 4 cups water or broth
- 1 (28 oz) or 2 (14 oz) cans diced tomatoes, undrained
- 2 c. V8 Juice
- 2 c. frozen cut green beans
- 1 c. frozen corn
- 4 medium potatoes
- 1 c. chopped cabbage
- 1 1/2 t. parsley
- Salt/pepper
- 1 t. thyme
- Bayleaf
Preparation
Step 1
In a Dutch oven, saute carrots, onions, celery & green peppers in oil until crisp-tender. Add garlic & cook 1 more minute.
Stir in remaining ingredients & bring to a boil.
Reduce heat, cover & simmer 2 hours or until vegetables are tender.
