Peppered Pork Tenderloin with Julienned Sweet Potato

This is a simple and delicious meat and potatoes dish. I like the contrast of the peppery pork with the sweet potatoes. By cutting the sweet potato into thin julienne strips it's ready when the pork is done.

Ingredients

  • 1 lb pork tenderloin
  • 1 to 2 Tbls cracked black & red peppercorns
  • 1 large sweet potato
  • olive oil spray
  • sea salt

Step 1

For the meat
Line a baking sheet with aluminum foil
Place the tenderloin on the sheet
Coat the pork with cracked pepper (more or less to taste)

For the potato
Peel the skin off the sweet potato
Using a julienne peeler shred the potato into thin strips

Place the potatoes on the sheet pan beside the pork spreading into a single layer and spray generously with olive oil
Generously salt the pork and potatoes

Bake in 425 degree oven for 20 to 25 minutes
Remove pork from the oven, place on a cutting board, cover with a tent of aluminum foil and allow to rest 5 to 10 minutes
(Turn oven off, return potatoes to oven and keep warm until ready to slice and serve the pork).
