Asparagus Salad with Roasted Peppers

  • 2 roasted red peppers
  • 2 roasted yellow peppers
  • 2 T olive oil
  • Salt & pepper
  • 1 T balsamic vinegar
  • 2 cloves minced garlic
  • 1 1/2 lb asparagus


Servings 4


Step 1

Cook asparagus. Cut into 3" pieces. Toss spears & peppers with olive oil.
Cut peppers into long strips. Spread 1/2 on bottom of baking dish. Arrange asparagus on top; season with salt & pepper. Top with remaining pepper strips.

Bake at 400 for 15 min. Drizzle with balsamic vinegar & serve
