Mix 1 c graham cracker crumbs with 2 tbsp sugar and 3 tbsp melted butter. Press into bottom of 18 paper lined muffin cups. Beat 3 8 oz pkgs softened cream cheese with 3/4 sugar, 1 tsp vanilla until well blended. Then add 3 eggs, one at a time and mix on low speed. Pour into cups. Bake at preheated 325 degree oven for 25-30 minutes , cool completely and refigerate 2 hours. Beat 1 c whipping cream and spread onto cheese cakes. Top with fruit, lemon zest, chocolate and coconut, whatever.
