Bean Soup

Ingredients

  • 1 smoked ham shank
  • 1 lb. beans (any variety)
  • 1 large onion, finely chopped
  • 2 carrots, thinly sliced
  • 8 cups water
  • salt & pepper to taste

Preparation

Step 1

Soak dried beans overnight. Water should be about 2 inches over the beans to allow for swelling.
Drain & rinse beans.
In large pot, bring all ingredients to a boil, reduce heat & simmer for 2 hours, covered.
Remove bone & cut any remain meat away. Dice & return to soup.
