AUNT KITTY’S LEMON PIE

Ingredients

  • 1 unbaked 9” pastry shell
  • 1-1/2 cups sugar
  • 1/3 cup butter or margarine softened
  • 3 large eggs
  • 1 tablespoon grated lemon rind
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon lemon extract

Preparation

Step 1

Line pastry shell with aluminum foil and fill with pie weights or dried beans. Bake at 425 degrees for 7 minutes and remove weights and foil. Whisk together sugar and butter until blended. Whisk in eggs and remaining ingredients. Pour into pie crust. Bake at 350 degrees for 30 minutes or until set. Cool on wire rack.
