ZUCCHINI BREAD

Ingredients

  • 2 c all purpose flour
  • 1/2 c whole wheat flour
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 c sugar
  • 1 c cooking oil
  • 3 eggs
  • 1/3 c molasses
  • 2 c shredded zucchini
  • 1 c raisins
  • 1 c chopped walnuts

Preparation

Step 1

1)combine flours, cinnamon, baking soda, baking powder and salt in a mixing bowl.

2) beat sugar, oil,eggs, and molasses in another mixing bowl until well combined. add flour mixture; stir just to combine. stir in zucchini, raisins, and nuts. divide batter between 2 greased 8x4x2 inch loaf pans.

3) bake at 350 for 40-45 minutes. cool 10 minutes on wire rack. remove from pans, coll on wire rack. wrap and store overnight before slicing.
