Watermelon Cooler

Ingredients

  • Simple Syrup:
  • 4 cups frozen, seedless fresh watermelon, cut into 1" cubes (see Preparation)
  • 1-1/2 oz tequila, chilled
  • 2 oz lime simple syrup (recipe below)
  • 1 oz lime juice
  • 1/2 cup white wine
  • Watermelon wedges, for garnish
  • 1 cup water
  • 1 cup sugar
  • Zest and juice of 1 lime

Preparation

Step 1

To prepare the watermelon for freezing, remove the rind and cube the flesh into 1" pieces. Freeze the watermelon in a single layer on a baking sheet for 6 hours.


To prepare the simple syrup, put everything into a small sauce pot, bring to a boil, and remove from the heat. Chill.


To prepare the drink, place all of the ingredients, except the garnish, into a blender and blend until smooth. Pour into chilled 8-oz glasses. Garnish with the watermelon wedges.
