Rhubarb Slush

  • 7-8 cups chopped rhubarb
  • 3 cups water
  • 3/4 cup white sugar
  • 1-6oz can frozen OJ concentrate
  • 1-6oz can frozen lemonade concentrate
  • 2 tblsp lime juice concentrate
  • 1 cup gin

Preparation

Step 1

1) Place rhubarb in large saucepan with water to cover. Bring to a boil and cook until soft. Purée.
2) Add sugar and let sit, stirring until dissolved.
3) Add juices and stir until completely thawed and mixed well.
4) Add gin and mix well.
5) Freeze in double servings in yogurt containers.

Before serving, let sit at room temperature for 10-15 mins to soften slightly. Then scrape with spoon into glasses and add 7-up and mix into slush.
